Part 1: Foundations

1

The Acid Duel

Riesling vs. Lemon

5 min Dry Riesling

The wine — moments ago crisp and acidic — now tastes mild, sweet, and fruity. The lemon acid briefly "numbed" your taste buds.

2

The Tannin Trap

Cabernet vs. Artichoke

5 min Bold Cabernet Sauvignon or Chianti

The previously elegant wine now tastes metallic, extremely bitter, and "thin". The fruit is gone, only a chemical furry feel remains.

3

The Spice Explosion

Primitivo vs. Sriracha

5 min High-alcohol red (Primitivo, Cal-Cab)

The burn explodes. The wine tastes only of sharp alcohol — all the fruit is gone.

4

The Umami Harmony

Champagne vs. Parmesan

5 min Brut Champagne or sparkling

The wine — moments ago crisp and almost stern — now feels creamy, soft, almost sweet. The Parmesan tastes more intense.

Part 2: Master Class

5

The Salt Magic

Young red wine vs. sea salt

3 min Bold young red with high tannin

The wine now feels softer, fruitier, less aggressive. Tannins feel velvety, acidity is suddenly integrated.

Start experiment
6

The Sweetness Trap

Bordeaux vs. dark chocolate

5 min Dry, premium Bordeaux or Rioja

The previously fine Bordeaux now tastes sour, thin — almost like vinegar. The fruit is gone.

7

The Smoke Amplifier

Barrel-aged wine vs. smoked ham

5 min Barrel-aged wine (Chardonnay or Tempranillo)

The smoke from the ham and the oak from the wine merge into an intense, almost "campfire" aroma. The wine feels stronger, finish longer.

Start experiment
8

The Umami Bomb

Aged wine vs. soy sauce

5 min Aged wine (older Rioja, mature Riesling)

The aged wine now feels incredibly lively, "meaty", and tertiary aromas leap forward.
